- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (4 oz) green chilies (optional for added heat)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 4 cups beef broth
- 1 cup shredded cheese (optional for topping)
- 1/2 cup sour cream (optional for topping)
- Fresh cilantro (optional for garnish)
- Tortilla chips (optional for serving)
Instructions
- Cook the Ground Beef: In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add Vegetables and Spices: Add the chopped onion and minced garlic to the pot. Sauté for 2-3 minutes until softened. Stir in the chili powder, cumin, paprika, garlic powder, salt, and pepper.
- Combine the Rest of the Ingredients: Add the black beans, kidney beans, corn, diced tomatoes, and green chilies (if using) to the pot. Stir everything together.
- Simmer: Pour in the beef broth and bring the soup to a simmer. Let it cook for 20-25 minutes, stirring occasionally.
- Serve: Once the soup is heated through and the flavors have blended, serve in bowls. Top with shredded cheese, sour cream, cilantro, and tortilla chips if desired.
Notes
- For a spicier soup, add extra chili powder, cayenne pepper, or jalapeños.
- This soup stores well in the fridge for up to 4 days, making it ideal for meal prep.
