Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch sheet pan or line it with parchment paper.
- Mix the Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In a separate bowl, mix kefir, melted butter, eggs, and vanilla extract until smooth.
- Prepare the Batter: Gradually fold the wet ingredients into the dry ingredients until just combined. Avoid overmixing to ensure a light texture.
- Optional Add-Ins: Gently fold in berries or chocolate chips if desired.
- Bake the Cake: Pour the batter into the prepared sheet pan. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack. Serve as is or with your favorite frosting and toppings.
Notes
- For a tangier flavor, increase the amount of kefir by ¼ cup and reduce the butter slightly.
- This cake pairs well with cream cheese frosting or a simple powdered sugar glaze.
