Easy Slow Cooker Beef Stroganoff

Indulge in a warm, hearty meal perfect for any busy day. This recipe is all about minimal prep, tender beef, and a creamy, flavorful sauce enriched by the aromatic touch of rosemary.

  • Total Time: 6.5–8.5 hours (low) / 3.5–4.5 hours (high)
  • Yield: 6 servings 1x

Ingredients

Scale

  • 12 pounds of cubed chuck roast or stew beef
  •  8 oz, sliced Mushrooms
  • 1 large, diced Onion
  • 23 cloves, minced Garlic
  •  2 cups Beef Broth
  • 12 sprigs fresh or 1 tsp dried Rosemary
  • 1 tsp Paprika
  • 1 tbsp Dijon Mustard
  • Sour Cream: 1 cup
  • 12 tbsp Flour (Optional)  for thickening
  • Salt & Pepper To taste

Instructions

  1. Prepare Ingredients: Slice mushrooms, dice onion, and mince garlic. If using fresh rosemary, strip leaves from the stems.
  2. Optional Beef Sear: Heat a skillet, sear beef cubes until browned on all sides. This step adds depth of flavor.
  3. Combine in Slow Cooker: Add beef, mushrooms, onion, garlic, beef broth, rosemary, paprika, and Dijon mustard. Stir ingredients to mix.
  4. Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Create Creamy Sauce: In the last 20 minutes, stir in sour cream. For a thicker sauce, mix flour with sour cream before adding.
  6. Serve: Pair with egg noodles, mashed potatoes, or rice. Garnish with chopped parsley if desired.

Notes

Tips for Success:  Beef Selection: Choose cuts like chuck roast for tenderness.

Cooking Time: For the best results, use the low setting to ensure the beef is tender and flavors meld beautifully.

Thickening the Sauce: Use flour or cornstarch mixed with water to adjust the consistency.

Flavor Boost: Add a splash of Worcestershire or soy sauce for depth.

  • Substitutions: Use Greek yogurt instead of sour cream for a tangier sauce.
  • Optional Additions: A splash of Worcestershire sauce or soy sauce adds depth.
  • Storage: Refrigerate leftovers for up to 3 days or freeze for up to 3 months
