- 1 large, diced Onion
- 2–3 cloves, minced Garlic
- 2 cups Beef Broth
- 1–2 sprigs fresh or 1 tsp dried Rosemary
- 1 tsp Paprika
- 1 tbsp Dijon Mustard
- Sour Cream: 1 cup
- 1–2 tbsp Flour (Optional) for thickening
- Salt & Pepper To taste
Instructions
- Prepare Ingredients: Slice mushrooms, dice onion, and mince garlic. If using fresh rosemary, strip leaves from the stems.
- Optional Beef Sear: Heat a skillet, sear beef cubes until browned on all sides. This step adds depth of flavor.
- Combine in Slow Cooker: Add beef, mushrooms, onion, garlic, beef broth, rosemary, paprika, and Dijon mustard. Stir ingredients to mix.
- Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Create Creamy Sauce: In the last 20 minutes, stir in sour cream. For a thicker sauce, mix flour with sour cream before adding.
- Serve: Pair with egg noodles, mashed potatoes, or rice. Garnish with chopped parsley if desired.
