- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp honey
- 1 tbsp Dijon mustard
- Salt and pepper to taste
- Fresh herbs (rosemary or thyme), optional
Instructions
- In a bowl, whisk together balsamic vinegar, olive oil, garlic, honey, Dijon mustard, salt, and pepper.
- Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over the chicken. Seal and refrigerate for at least 30 minutes (or overnight for better flavor).
- Heat a skillet over medium-high heat and add a little olive oil.
- Remove the chicken from the marinade and cook for 6-7 minutes per side, or until the chicken reaches an internal temperature of 165°F.
- Remove the chicken and let it rest for a few minutes before serving.
Notes
- For a richer flavor, try marinating the chicken overnight.
- This recipe pairs well with roasted vegetables or mashed potatoes.
- If you don’t have Dijon mustard, substitute with regular mustard or omit it.
